- 1 pound fresh green beans, trimmed
- 8 ounces cremini mushrooms, chopped
- 8 ounces button mushrooms, chopped
- 1 can cream of mushroom soup
- 1 cup whole milk (or almond milk)
- 2 tablespoons soy sauce or Worcestershire sauce
- 1 cup French fried onions
Instructions
- Preheat your oven to 350°F (175°C).
- Snap the ends off the green beans and rinse them. Optionally blanch them for a few minutes.
- In a skillet, heat oil over medium heat and sauté the chopped mushrooms until golden brown.
- In a large bowl, combine the sautéed mushrooms, blanched green beans, cream of mushroom soup, milk, and soy sauce; stir well.
- Transfer the mixture to a greased casserole dish, spreading evenly.
- Sprinkle the French fried onions on top.
- Bake for 25-30 minutes until bubbling and onions are crispy.
- Let the casserole cool for a few minutes before serving.
Notes
You can substitute asparagus for green beans or use vegetable broth instead of cream of mushroom soup for a lighter version.
