Ingredients

  • 1 pound fresh green beans, trimmed
  • 8 ounces cremini mushrooms, chopped
  • 8 ounces button mushrooms, chopped
  • 1 can cream of mushroom soup
  • 1 cup whole milk (or almond milk)
  • 2 tablespoons soy sauce or Worcestershire sauce
  • 1 cup French fried onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Snap the ends off the green beans and rinse them. Optionally blanch them for a few minutes.
  3. In a skillet, heat oil over medium heat and sauté the chopped mushrooms until golden brown.
  4. In a large bowl, combine the sautéed mushrooms, blanched green beans, cream of mushroom soup, milk, and soy sauce; stir well.
  5. Transfer the mixture to a greased casserole dish, spreading evenly.
  6. Sprinkle the French fried onions on top.
  7. Bake for 25-30 minutes until bubbling and onions are crispy.
  8. Let the casserole cool for a few minutes before serving.

Notes

You can substitute asparagus for green beans or use vegetable broth instead of cream of mushroom soup for a lighter version.
