  • 1 cup grated parmesan cheese
  • 2 tablespoons fresh rosemary (chopped)
  • Coarse salt (for sprinkling)

Instructions

  1. Activate Yeast: Combine warm water, sugar, and yeast in a bowl. Let sit for 5 minutes until bubbly.
  2. Make the Dough: In another bowl, mix flour and salt. Gradually add the yeast mixture and melted butter, stirring to form a dough.
  3. Knead the Dough: Transfer to a floured surface and knead for 5-7 minutes until smooth.
  4. Let It Rise: Place in a greased bowl, cover with a damp cloth, and let rise for about 1 hour until doubled in size.
  5. Prepare for Stuffing: Punch down the dough, divide into 12 pieces, and flatten. Place a cube of mozzarella in the center, fold dough around it, and seal tightly.
  6. Form Pretzels: Roll each piece into a 20-inch rope, twist into a pretzel shape, and place on a parchment-lined baking sheet.
  7. Boil and Bake: Preheat oven to 450°F. Boil water, add baking soda, and dip each pretzel for 30 seconds. Brush with butter, sprinkle with parmesan, rosemary, and salt, then bake for 12-15 minutes until golden.
