- 1 packet active dry yeast
- 1 ½ cups warm water (about 110°F)
- 1 tablespoon sugar (or honey/maple syrup)
- ½ cup melted butter (or olive oil)
- 2 cups mozzarella cheese (cubed)
- 1 cup grated parmesan cheese
- 2 tablespoons fresh rosemary (chopped)
- Coarse salt (for sprinkling)
Instructions
- Activate Yeast: Combine warm water, sugar, and yeast in a bowl. Let sit for 5 minutes until bubbly.
- Make the Dough: In another bowl, mix flour and salt. Gradually add the yeast mixture and melted butter, stirring to form a dough.
- Knead the Dough: Transfer to a floured surface and knead for 5-7 minutes until smooth.
- Let It Rise: Place in a greased bowl, cover with a damp cloth, and let rise for about 1 hour until doubled in size.
- Prepare for Stuffing: Punch down the dough, divide into 12 pieces, and flatten. Place a cube of mozzarella in the center, fold dough around it, and seal tightly.
- Form Pretzels: Roll each piece into a 20-inch rope, twist into a pretzel shape, and place on a parchment-lined baking sheet.
- Boil and Bake: Preheat oven to 450°F. Boil water, add baking soda, and dip each pretzel for 30 seconds. Brush with butter, sprinkle with parmesan, rosemary, and salt, then bake for 12-15 minutes until golden.
