- 2 ½ cups all-purpose flour

- 1 cup unsalted butter, cold and diced
- 4 cups fresh cranberries
- 1 cup granulated sugar
- 1 cup brown sugar
- ¼ cup all-purpose flour
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 tablespoon lemon juice
- Zest of one lemon
- Ice water as needed
Instructions
- Prepare the crust by combining 2 ½ cups flour, 1 teaspoon salt, and 1 tablespoon sugar. Cut in 1 cup of cold butter until coarse. Add ice water gradually until dough holds together, shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
- Make the filling by combining 4 cups cranberries, 1 cup granulated sugar, 1 cup brown sugar, ¼ cup flour, 1 teaspoon cinnamon, ½ teaspoon nutmeg, 1 tablespoon lemon juice, and lemon zest. Toss to coat and let sit for 15 minutes.
- Preheat the oven to 375°F (190°C).
- Roll out the dough on a floured surface into a 12-inch circle and transfer to a 9-inch pie pan.
- Pour the cranberry mixture into the crust, spread evenly, and roll out a second disk for the top crust, cutting slits for ventilation. Crimp edges to seal.
- Bake for 45-50 minutes or until the crust is golden brown and filling is bubbly, covering edges with foil if they brown too quickly.
- Cool on a wire rack for at least two hours before slicing.
Notes
For added flavor, serve with a scoop of vanilla ice cream or whipped cream. Ensure to use fresh cranberries for the best taste.
