- 1 ribeye steak
- 2 tablespoons native pepperberry
- 1 tablespoon coarse sea salt
- 2 garlic cloves, minced
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon fresh thyme, chopped
- 2 tablespoons olive oil
Instructions
- Remove the ribeye from the refrigerator 30 minutes prior to cooking to reach room temperature.
- In a bowl, combine the pepperberry, sea salt, minced garlic, rosemary, thyme, and olive oil to form a paste.
- Generously coat the ribeye with the rub, massaging it in well, and let it sit for 20 minutes.
- Preheat a cast-iron skillet over high heat.
- Add a splash of olive oil to the skillet and sear the ribeye for 4-5 minutes on each side.
- Remove from heat and let it rest for 10 minutes.
- Slice against the grain and serve with sides like garlic sautéed mushrooms or salad.
Notes
For best results, let the steak rest after cooking to enhance juiciness. Can substitute native pepperberry with black peppercorns mixed with allspice or smoked paprika if unavailable.
