Instructions
- Prepare the Crust: Crush the graham crackers into fine crumbs. Combine with melted butter and sugar, then press into the bottom of a springform pan. Chill the crust.
- Make the Filling: Beat the cream cheese until smooth. Gradually add sugar and mix. Whip the heavy cream until stiff peaks form and fold into the cream cheese mixture.
- Prep the Apples: Toss the sliced apples in lemon juice and sprinkle with cinnamon. Let them sit to soften.
- Assemble the Cheesecake: Spoon the cream cheese filling over the crust and layer the apples on top or mix them into the filling.
- Chill: Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
- Serve: Release the springform pan, slice, and add a sprinkle of cinnamon or caramel if desired.

Allowing the cheesecake to chill overnight deepens the flavors and improves texture. Use low-fat cream cheese for a lighter option.
