- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 tbsp lemon juice
- 1 cup heavy whipping cream
- 1 ½ cups graham cracker crumbs
- ½ cup butter, melted
- Optional toppings: crushed nuts, chocolate chips, seasonal sprinkles
Instructions
- Prepare the Crust: In a bowl, combine graham cracker crumbs and melted butter until well mixed. Press this mixture firmly into the bottom of a mini muffin tin, forming small crusts.
- Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth. Add in the vanilla extract and lemon juice; mix until combined.
- Whip the Cream: In another bowl, beat the heavy cream until stiff peaks form.
- Combine All Ingredients: Gently fold the whipped cream into the cheesecake mixture.
- Fill the Crusts: Spoon or pipe the cheesecake mixture into your prepared crusts and cover with plastic wrap. Refrigerate for at least 240 minutes, or until set.
- Finish with Toppings: Once chilled, remove from the tin and add your chosen toppings before serving!
