- 2–3 Earl Grey tea bags
- 1/4 cup granulated sugar (or honey/maple syrup)
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon gelatin (optional, for firmness)
Instructions
- Infuse the Tea: Combine milk and tea bags in a saucepan and heat until steaming. Remove from heat and let steep for 10 minutes.
- Whisk the Ingredients: In a bowl, mix sugar and cornstarch. Whisk in 1/4 cup of the infused milk until smooth.
- Combine and Heat: Pour remaining milk back into the saucepan. Add the cornstarch mixture and heat gently, stirring until thickened (about 5-7 minutes).
- Add Flavor: Stir in vanilla and gelatin. Allow to cool before transferring to cups or a bowl.
- Chill and Set: Refrigerate for at least 4 hours until set. Serve with toppings if desired.
Notes
Steeping tea longer enhances the flavor. Allow pudding to cool to room temperature before chilling for a silker texture.
