Description

A light, creamy dessert that combines the delicate flavors of Earl Grey tea with a silky texture, perfect for gatherings or a comforting treat at home.

Ingredients

Scale
  • 2 cups whole milk (or alternative milk)
  • 23 Earl Grey tea bags
  • 1/4 cup granulated sugar (or honey/maple syrup)
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin (optional, for firmness)

Instructions

  1. Infuse the Tea: Combine milk and tea bags in a saucepan and heat until steaming. Remove from heat and let steep for 10 minutes.
  2. Whisk the Ingredients: In a bowl, mix sugar and cornstarch. Whisk in 1/4 cup of the infused milk until smooth.
  3. Combine and Heat: Pour remaining milk back into the saucepan. Add the cornstarch mixture and heat gently, stirring until thickened (about 5-7 minutes).
  4. Add Flavor: Stir in vanilla and gelatin. Allow to cool before transferring to cups or a bowl.
  5. Chill and Set: Refrigerate for at least 4 hours until set. Serve with toppings if desired.

Notes

Steeping tea longer enhances the flavor. Allow pudding to cool to room temperature before chilling for a silker texture.
