A delightful and creamy no-bake mango panna cotta, perfect for warm summer days and family gatherings.
Ingredients

- 1 cup heavy cream
- 1 cup coconut milk
- 1/2 cup sugar
- 2 teaspoons gelatin
- 2 ripe mangoes, pureed
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a small bowl, sprinkle the gelatin over a few tablespoons of cold water and let it sit for 5-10 minutes until it blooms.
- In a saucepan, combine the heavy cream, coconut milk, sugar, and a pinch of salt over medium heat. Stir until just about to simmer.
- Remove from heat, stir in the bloomed gelatin until completely dissolved.
- Mix in the vanilla extract and allow it to cool slightly.
- Puree the fresh mango until smooth and fold into the cream mixture.
- Cover and refrigerate for at least 4 hours, preferably overnight.
- Serve chilled, garnished with fresh mango or mint.
Notes
For best flavor, use ripe mangoes and chill overnight for enhanced flavor melding.
