No-Bake Mango Panna Cotta

Description

A delightful and creamy no-bake mango panna cotta, perfect for warm summer days and family gatherings.


Ingredients

  • 1 cup heavy cream
  • 1 cup coconut milk
  • 1/2 cup sugar
  • 2 teaspoons gelatin
  • 2 ripe mangoes, pureed
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a small bowl, sprinkle the gelatin over a few tablespoons of cold water and let it sit for 5-10 minutes until it blooms.
  2. In a saucepan, combine the heavy cream, coconut milk, sugar, and a pinch of salt over medium heat. Stir until just about to simmer.
  3. Remove from heat, stir in the bloomed gelatin until completely dissolved.
  4. Mix in the vanilla extract and allow it to cool slightly.
  5. Puree the fresh mango until smooth and fold into the cream mixture.
  6. Cover and refrigerate for at least 4 hours, preferably overnight.
  7. Serve chilled, garnished with fresh mango or mint.

Notes

For best flavor, use ripe mangoes and chill overnight for enhanced flavor melding.
