Ingredients

  • 1 cup shelled pistachios, chopped or ground
  • 8 oz cream cheese, softened
  • 1 cup whipped topping or heavy cream
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1 pie crust (optional, graham cracker or cookie)

Instructions

  1. Finely chop or grind the pistachios, reserving some whole nuts for garnish.
  2. In a mixing bowl, blend softened cream cheese with sugar until smooth, then add vanilla extract.
  3. Gently fold in the whipped topping until combined, being careful not to deflate it.
  4. Stir in the ground pistachios until evenly distributed.
  5. If using, fill the pie crust with the pistachio mixture, smoothing the top. Otherwise, pour into a greased dish.
  6. Cover and chill for at least 4 hours or overnight.
  7. Garnish with whole pistachios before serving.

Notes

For added flavor, drizzle melted chocolate or honey before serving. Make sure to chill adequately for the best texture.
