- 1 cup shelled pistachios, chopped or ground
- 8 oz cream cheese, softened
- 1 cup whipped topping or heavy cream
- 1/4 cup sugar
- 1 tsp vanilla extract
- 1 pie crust (optional, graham cracker or cookie)
Instructions
- Finely chop or grind the pistachios, reserving some whole nuts for garnish.
- In a mixing bowl, blend softened cream cheese with sugar until smooth, then add vanilla extract.
- Gently fold in the whipped topping until combined, being careful not to deflate it.
- Stir in the ground pistachios until evenly distributed.
- If using, fill the pie crust with the pistachio mixture, smoothing the top. Otherwise, pour into a greased dish.
- Cover and chill for at least 4 hours or overnight.
- Garnish with whole pistachios before serving.
Notes
For added flavor, drizzle melted chocolate or honey before serving. Make sure to chill adequately for the best texture.
