Instructions

  1. Gather all ingredients and set up a clean workspace, dusting the surface with cornstarch or potato starch to prevent sticking.
  2. In a mixing bowl, combine sweet rice flour, sugar, and salt. Gradually add warm water until smooth.
  3. Transfer the mixture to a microwave-safe bowl, cover with a damp cloth, and microwave for 2 minutes. Stir, cover again, and microwave for another minute. Repeat until the dough is translucent and slightly sticky.
  4. Let the mixture cool until manageable, being careful as it will still be warm.
  5. Dust your hands and workspace with cornstarch, take small portions of dough, flatten them in your palms, place filling in the center, and shape into seals.
  6. Chill the mochi in the refrigerator for about 30 minutes to firm up.
  7. Prepare the dipping sauce of your choice to serve with the mochi.
