- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 8 oz cream cheese, at room temperature
- 1 cup heavy cream
- ½ cup sugar (adjust to taste)
- 1 tbsp gelatin (or agar-agar for vegetarian option)
- 2 tbsp matcha powder
- 2 cups ripe strawberries, pureed
- 1 tsp vanilla extract
Instructions
- Prepare the crust: In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the base of a springform pan and refrigerate.
- Make the mousse: Beat the cream cheese until smooth, gradually add sugar, and mix. Whip the heavy cream to soft peaks and fold into the cream cheese mixture. Bloom gelatin in water, dissolve over low heat, then let cool. Divide the mousse; mix one half with matcha and the other with pureed strawberries.
- Assemble the cake: Spoon the strawberry mousse over the crust and freeze for 30 minutes. Add the matcha mousse on top and refrigerate for at least 4 hours or overnight.
- Serve and enjoy: Remove from the pan, slice, and garnish with fresh strawberries and matcha.
Notes
Let the cake sit in the refrigerator for a few hours before serving to enhance flavors. Use fresh strawberries for best results.
