Instructions

  1. Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  2. Cream together softened butter, brown sugar, and granulated sugar in a large bowl until fluffy.
  3. Add in the eggs one at a time, along with the vanilla extract, and beat until incorporated.
  4. In a separate bowl, whisk together oats, flour, baking soda, baking powder, salt, and cinnamon.
  5. Gradually mix dry ingredients into the wet mixture until just combined.
  6. Fold in chocolate chips, nuts, or dried fruit as desired.
  7. Drop spoonfuls of dough onto the baking sheets, spacing them about two inches apart.
  8. Bake for 10-12 minutes or until edges turn golden brown; centers should remain soft.
  9. Let cool for a few minutes before transferring to a wire rack to cool completely.

Notes

For a nuttier flavor, toast the oats lightly before mixing. Avoid using instant oats for best texture.
