  • 1 cup granulated sugar
  • ½ cup sugar (for cherry filling)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tbsp cornstarch
  • Pit and chopped cherries (fresh or frozen)
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cream together the butter and sugar until light and fluffy; add eggs one at a time and mix in vanilla.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually fold dry ingredients into the wet mixture.
  4. For the cherry filling, mix chopped cherries with sugar and cornstarch.
  5. Spread two-thirds of the dough into the prepared baking pan, layer with cherry filling, and dollop remaining dough on top.
  6. Bake for 35-40 minutes until golden and bubbling, then let cool for at least an hour before cutting.

Notes

Allow bars to cool completely before cutting to ensure a better texture. Dust with powdered sugar for presentation.
