- 1 medium-sized Russet potato, peeled and boiled
- 4 cups powdered sugar, sifted
- 1 teaspoon vanilla extract
- 1 tablespoon butter (or margarine)
- 1/2 cup shredded coconut (optional)
Instructions
- Prepare the Potato: Peel and boil the potato until tender, then cool and mash until smooth.
- Mix Ingredients: In a bowl, combine cooled mashed potato with powdered sugar and vanilla extract; mix until well blended.
- Knead the Mixture: Dust a surface with powdered sugar, transfer the mixture, and knead until pliable. Add more sugar if too sticky.
- Roll and Cut: Roll the dough into a 1/2 inch thick rectangle and cut into squares or shapes.
- Let It Set: Allow the candy to sit for 1 hour at room temperature to firm up.
- Serve and Enjoy: Enjoy plain or with crushed nuts or cocoa sprinkled on top.
Notes
For a tropical twist, you can add shredded coconut. Allow the candy to sit properly for best texture.
