- 1 lb Sausage (Italian or smoked, pork or chicken)
- 2 lbs Potatoes (Yukon gold or red), diced
- 4 tbsp Butter
- 4 cloves Garlic, minced
- 1 Onion (white or yellow), chopped
- Fresh herbs (rosemary or thyme), to taste
- 2 tbsp Olive oil
Instructions
- Prep your ingredients: Chop the sausage and dice the potatoes.
- Brown the sausage: In a large skillet over medium heat, melt 2 tablespoons of butter and add the sausage. Sauté until golden brown, about 5–7 minutes. Remove and set aside.
- Sauté aromatics: In the same pan, add another tablespoon of butter, toss in the chopped onions and minced garlic, cooking until fragrant.
- Cook the potatoes: Add the diced potatoes, stirring occasionally. Cook until browned and fork-tender, about 10–15 minutes. Season with salt and pepper.
- Combine everything: Return the sausage to the pan and mix with the fresh herbs. Cook together for a couple of minutes.
- Final touches: Drizzle with olive oil and additional butter, if desired. Serve hot.
Notes
For a healthier version, consider using turkey sausage or sweet potatoes. Fresh herbs are recommended for the best flavor.
