Description

Ingredients

  • 1 lb Italian sausage (or turkey/chicken sausage)
  • 2 lbs Baby Yukon Gold potatoes (or red potatoes)
  • 4 cloves garlic, minced
  • 4 tablespoons butter (or olive oil for dairy-free option)
  • Fresh parsley or thyme, for garnish
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the sausage into bite-sized pieces and chop the potatoes into uniform halves or quarters.
  3. Melt half of the butter in a large ovenproof skillet over medium heat and sauté the minced garlic until fragrant.
  4. Add the sausage pieces and cook until browned.
  5. Combine the potatoes with the sausage in the skillet, seasoning with salt and pepper.
  6. Drizzle the remaining butter over the mixture and transfer to the oven.
  7. Roast for 25-30 minutes, stirring halfway through, until the potatoes are golden and tender.
  8. Garnish with fresh herbs and serve warm.

Notes

For a vegetarian twist, substitute sausage with mushrooms and add seasonal vegetables.
