- 2 lbs Baby Yukon Gold potatoes (or red potatoes)
- 4 cloves garlic, minced
- 4 tablespoons butter (or olive oil for dairy-free option)
- Fresh parsley or thyme, for garnish
- Salt and pepper, to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Slice the sausage into bite-sized pieces and chop the potatoes into uniform halves or quarters.
- Melt half of the butter in a large ovenproof skillet over medium heat and sauté the minced garlic until fragrant.
- Add the sausage pieces and cook until browned.
- Combine the potatoes with the sausage in the skillet, seasoning with salt and pepper.
- Drizzle the remaining butter over the mixture and transfer to the oven.
- Roast for 25-30 minutes, stirring halfway through, until the potatoes are golden and tender.
- Garnish with fresh herbs and serve warm.
Notes
For a vegetarian twist, substitute sausage with mushrooms and add seasonal vegetables.
