A comforting and flavorful dish combining tender chicken, roasted potatoes, and creamy feta, all infused with zesty lemon and herbs.

- 4 bone-in, skin-on chicken breasts or thighs
- 2 pounds new potatoes, halved or quartered
- 1 cup feta cheese, crumbled
- 4 cloves fresh garlic, minced
- 2 tablespoons fresh thyme
- 2 tablespoons fresh oregano
- 1 tablespoon fresh parsley
- 2 lemons, juice and halves
- 3 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken dry and season with salt, pepper, and herbs. Chop the potatoes.
- In a large oven-safe skillet, heat olive oil over medium-high heat and sear the chicken skin-side down for 5-7 minutes until golden brown. Flip and sear the other side for another 3-4 minutes. Remove chicken and set aside.
- Add potatoes to the pan, tossing in the drippings and seasoning them with salt, pepper, herbs, and garlic. Cook for about 5 minutes.
- Return chicken to the skillet among the potatoes. Squeeze lemon juice over everything and add lemon halves.
- Roast in the oven for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and potatoes are tender.
- In the last 5 minutes, sprinkle feta on top and let it melt slightly.
- Serve hot with fresh herbs on top.
Notes
For added flavor, baste the chicken with pan juices occasionally.
