- 4 chicken thighs or breasts
- 2 lemons, juiced
- 100g feta cheese, crumbled
- 500g baby potatoes, quartered
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix chicken with olive oil, salt, pepper, minced garlic, oregano, and thyme. Marinate for 15 minutes.
- In another bowl, toss quartered potatoes with olive oil, salt, and pepper until evenly coated.
- On a baking sheet, arrange marinated chicken and potatoes in a single layer.
- Crumble feta over chicken and potatoes, then drizzle with additional lemon juice.
- Bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C) and potatoes are golden.
- Let sit for a few minutes before serving. Garnish with fresh herbs or lemon slices if desired.
Notes
Don’t crowd the pan and use a meat thermometer for perfect chicken. You can add vegetables like bell peppers or zucchini for more variety.
