Ingredients

  • 4 chicken thighs or breasts
  • 2 lemons, juiced
  • 100g feta cheese, crumbled
  • 500g baby potatoes, quartered
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix chicken with olive oil, salt, pepper, minced garlic, oregano, and thyme. Marinate for 15 minutes.
  3. In another bowl, toss quartered potatoes with olive oil, salt, and pepper until evenly coated.
  4. On a baking sheet, arrange marinated chicken and potatoes in a single layer.
  5. Crumble feta over chicken and potatoes, then drizzle with additional lemon juice.
  6. Bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C) and potatoes are golden.
  7. Let sit for a few minutes before serving. Garnish with fresh herbs or lemon slices if desired.

Notes

Don’t crowd the pan and use a meat thermometer for perfect chicken. You can add vegetables like bell peppers or zucchini for more variety.
