Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • Fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large skillet, heat olive oil over medium heat. Season chicken with salt, pepper, and spices; cook until golden brown on all sides.
  2. Remove chicken and set aside. In the same skillet, sauté onion and garlic until aromatic.
  3. Stir in rice and bell peppers; toast for a few minutes.
  4. Pour in chicken broth, bring to a boil, then return chicken to skillet. Cover and simmer until rice is fluffy and has absorbed flavors.
  5. Stir in cilantro and lime juice, adjusting seasoning as needed. Serve warm with extra lime wedges and toppings.

Notes

Feel free to substitute chicken with turkey or beans for a vegetarian option. For different grains, quinoa or cauliflower rice are great alternatives.
