- 1 lb boneless chicken (breast or thighs)
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- Fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large skillet, heat olive oil over medium heat. Season chicken with salt, pepper, and spices; cook until golden brown on all sides.
- Remove chicken and set aside. In the same skillet, sauté onion and garlic until aromatic.
- Stir in rice and bell peppers; toast for a few minutes.
- Pour in chicken broth, bring to a boil, then return chicken to skillet. Cover and simmer until rice is fluffy and has absorbed flavors.
- Stir in cilantro and lime juice, adjusting seasoning as needed. Serve warm with extra lime wedges and toppings.
Notes
Feel free to substitute chicken with turkey or beans for a vegetarian option. For different grains, quinoa or cauliflower rice are great alternatives.
