A comforting and hearty soup that combines the classic flavors of lasagna in a simple one-pot dish.

- 1 tablespoon olive oil
- 1 pound ground beef or turkey
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 cups marinara sauce
- 4 cups chicken or vegetable broth
- 8 ounces broken lasagna noodles
- 2 cups fresh spinach or kale
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh herbs (basil or parsley) for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add ground meat, season with salt and pepper, and cook until browned.
- Add onions and garlic, and sauté until translucent and fragrant.
- Pour in marinara sauce and broth, stirring well. Bring to a gentle simmer.
- Add broken lasagna noodles and simmer for 10-12 minutes until the pasta is al dente.
- Stir in fresh spinach and dollops of ricotta just before serving, allowing the greens to wilt.
- Top with shredded mozzarella, cover the pot until melted, and garnishing with fresh herbs and Parmesan.
Notes
Feel free to substitute ingredients based on your preferences. This dish can easily accommodate meat or be made vegetarian.
