Instructions

  1. Preheat your oven to 375°F (190°C). Grease your muffin tin or line it with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In a separate bowl, mix eggs, milk, melted butter (or oil), orange juice, and zest. Stir until just blended; it’s okay if some lumps remain.
  4. Pour the wet ingredients into the dry ingredients. Gently fold them together with a spatula, being careful not to overmix.
  5. Delicately fold in the fresh cranberries until evenly distributed.
  6. Using a scoop or spoon, fill each muffin cup about three-quarters full.
  7. Place the muffin tin in the preheated oven and bake for 15-20 minutes or until golden brown.
  8. Let the muffins cool in the pan for a few minutes, then transfer them to a wire rack.
