- 1/2 cup freshly squeezed orange juice
- 1 tbsp freshly grated orange zest
- 1 cup fresh cranberries (or dried cranberries)
Instructions
- Preheat your oven to 375°F (190°C). Grease your muffin tin or line it with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt until well combined.
- In a separate bowl, mix eggs, milk, melted butter (or oil), orange juice, and zest. Stir until just blended; it’s okay if some lumps remain.
- Pour the wet ingredients into the dry ingredients. Gently fold them together with a spatula, being careful not to overmix.
- Delicately fold in the fresh cranberries until evenly distributed.
- Using a scoop or spoon, fill each muffin cup about three-quarters full.
- Place the muffin tin in the preheated oven and bake for 15-20 minutes or until golden brown.
- Let the muffins cool in the pan for a few minutes, then transfer them to a wire rack.
Notes
For a cozy flavor, consider adding nutmeg or cinnamon. Ensure ingredients are at room temperature for better mixing.
