- 1 cup fresh cranberries (or frozen)
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup unsalted butter, melted (or oil)
- 1/2 cup orange juice
- 1 tablespoon orange zest
- Optional: chopped nuts, cinnamon
Instructions
- Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
- In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
- In another bowl, whisk the eggs and add melted butter, orange juice, and zest. Mix until combined.
- Create a well in the center of the dry ingredients and pour in the wet mixture. Stir gently until just combined; fold in the cranberries.
- Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes until golden brown. A toothpick inserted should come out clean.
- Let the muffins cool in the tin for a few minutes before transferring to a wire rack. Serve warm.

Don’t skip the zest; it adds essential flavor. Be careful not to overmix the batter to keep muffins fluffy.
