  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda

  • 2 large eggs
  • 1/2 cup unsalted butter, melted (or oil)
  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • Optional: chopped nuts, cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
  2. In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk the eggs and add melted butter, orange juice, and zest. Mix until combined.
  4. Create a well in the center of the dry ingredients and pour in the wet mixture. Stir gently until just combined; fold in the cranberries.
  5. Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
  6. Bake for 18-20 minutes until golden brown. A toothpick inserted should come out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring to a wire rack. Serve warm.
