- 1 cup dried cranberries, chopped
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together butter and sugar until light and fluffy.
- Mix in orange zest and vanilla extract.
- Gradually sift in flour and salt, stirring until just combined.
- Fold in chopped cranberries.
- Shape the dough into a log, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Slice the chilled dough into ½-inch rounds and place on the baking sheet.
- Bake for 12-15 minutes or until edges are lightly golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a nut-free version, omit any nuts. Dried fruits can be substituted as desired.
