Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together butter and sugar until light and fluffy.
  3. Mix in orange zest and vanilla extract.
  4. Gradually sift in flour and salt, stirring until just combined.
  5. Fold in chopped cranberries.
  6. Shape the dough into a log, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  7. Slice the chilled dough into ½-inch rounds and place on the baking sheet.
  8. Bake for 12-15 minutes or until edges are lightly golden.
