Description

Delicious Orange Strawberry Muffins with a buttery streusel topping, perfect for brunch or a quick snack.


Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 cup granulated sugar
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 cup fresh strawberries, chopped
  • 1 tsp orange zest
  • 1/2 cup orange juice
  • For the streusel topping: 1/2 cup flour, 1/2 cup sugar, 1/4 cup butter, spices (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, whisk together the flour, baking powder, sugar, and salt.
  3. In another bowl, mix the melted butter, eggs, milk, orange juice, and zest together.
  4. Gradually add the wet mixture to the dry ingredients and gently fold in the strawberries.
  5. In a small bowl, combine the streusel topping ingredients until crumbly.
  6. Fill the muffin cups about two-thirds full with batter and sprinkle the streusel on top.
  7. Bake for 18-22 minutes or until golden brown and a toothpick comes out clean.
  8. Cool in the tin for 5 minutes before transferring to a wire rack.

Notes

For added variation, try using whole wheat flour or add chopped nuts and other seasonal fruits.
