Delicious Orange Strawberry Muffins with a buttery streusel topping, perfect for brunch or a quick snack.

- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 cup granulated sugar
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup milk
- 1 cup fresh strawberries, chopped
- 1 tsp orange zest
- 1/2 cup orange juice
- For the streusel topping: 1/2 cup flour, 1/2 cup sugar, 1/4 cup butter, spices (to taste)
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a mixing bowl, whisk together the flour, baking powder, sugar, and salt.
- In another bowl, mix the melted butter, eggs, milk, orange juice, and zest together.
- Gradually add the wet mixture to the dry ingredients and gently fold in the strawberries.
- In a small bowl, combine the streusel topping ingredients until crumbly.
- Fill the muffin cups about two-thirds full with batter and sprinkle the streusel on top.
- Bake for 18-22 minutes or until golden brown and a toothpick comes out clean.
- Cool in the tin for 5 minutes before transferring to a wire rack.
Notes
For added variation, try using whole wheat flour or add chopped nuts and other seasonal fruits.
