Description

Delightful ice cream sandwiches made from crispy puffed cereal, creamy peanut butter, and sweet jelly, perfect for summer days and family gatherings.

Ingredients

Scale
  • 2 cups puffed cereal (Rice Krispies or other)
  • 1 cup vanilla ice cream
  • 1/2 cup creamy or crunchy peanut butter
  • 1/4 cup grape jelly or jam (or other flavors)

Instructions

  1. Prep Your Workspace: Clear a space on your kitchen counter and gather all your ingredients.
  2. Make the Base: In a mixing bowl, combine the puffed cereal and peanut butter until thoroughly coated.
  3. Form the Sandwich Base: Line a small baking dish with parchment paper and press the cereal mixture into an even layer, about 1 inch thick.
  4. Freeze: Place the base in the freezer for 15–20 minutes until firm.
  5. Ice Cream Layer: Spread a thick layer of ice cream over the base, then spoon on dollops of jelly among the ice cream.
  6. Complete the Sandwich: Press the remaining cereal mixture onto the jelly layer to form another sandwich layer on top.
  7. Final Freeze: Return the sandwich to the freezer for at least 1 hour.
  8. Slice and Serve: Slice into squares or rectangles and serve immediately, or wrap individual sandwiches in plastic wrap for later.

Notes

For a nut-free option, substitute peanut butter with almond or cashew butter. Experiment with different ice cream flavors and cereals for variety.
