Ingredients

- 4 ripe peaches, peeled and sliced
- 1/2 cup granulated sugar
- 1/2 teaspoon cinnamon
- 1/4 cup cold butter, cubed
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 1 egg (optional, for brushing)
Instructions
- In a mixing bowl, combine flour and salt. Cut in cold butter until resembling coarse crumbs. Gradually mix in ice water to form a dough. Wrap and chill for 30 minutes.
- In a bowl, combine sliced peaches, sugar, cinnamon, and lemon juice. Toss to coat.
- Roll out chilled dough to 1/8-inch thickness. Cut out circles with a cutter (4-5 inches).
- Place a spoonful of peach filling on each circle, fold and crimp edges to seal.
- Preheat oven to 425°F (220°C). Place pies on a parchment-lined baking sheet. Brush with beaten egg if desired. Bake for 20-25 minutes or until golden brown.
- Cool slightly, dust with powdered sugar if desired, and serve.
Notes
Using cold butter and ice water helps to achieve a flaky crust. Avoid overfilling to prevent sogginess.
