Description

Delightful peach-filled hand pies encased in a flaky, buttery crust, perfect for summer desserts.


Ingredients

  • 4 ripe peaches, peeled and sliced
  • 1/2 cup granulated sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup cold butter, cubed
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 egg (optional, for brushing)

Instructions

  1. In a mixing bowl, combine flour and salt. Cut in cold butter until resembling coarse crumbs. Gradually mix in ice water to form a dough. Wrap and chill for 30 minutes.
  2. In a bowl, combine sliced peaches, sugar, cinnamon, and lemon juice. Toss to coat.
  3. Roll out chilled dough to 1/8-inch thickness. Cut out circles with a cutter (4-5 inches).
  4. Place a spoonful of peach filling on each circle, fold and crimp edges to seal.
  5. Preheat oven to 425°F (220°C). Place pies on a parchment-lined baking sheet. Brush with beaten egg if desired. Bake for 20-25 minutes or until golden brown.
  6. Cool slightly, dust with powdered sugar if desired, and serve.

Notes

Using cold butter and ice water helps to achieve a flaky crust. Avoid overfilling to prevent sogginess.
