Ingredients

- 1 cup glutinous rice flour
- 2 ripe peaches, peeled and sliced
- 1 tablespoon sugar
- 3/4 cup water
- Cornstarch for dusting
- Optional: 1 teaspoon vanilla extract
Instructions
- Prepare the Peaches: Toss sliced peaches with sugar and let sit for 10 minutes.
- Make the Mochi Dough: Mix glutinous rice flour and water in a bowl until smooth.
- Cook the Dough: Microwave for 4-5 minutes, stirring every minute until sticky and translucent.
- Dust Your Surface: Sprinkle cornstarch on your work surface.
- Shape the Daifuku: Divide dough, flatten, fill with peach mixture, and seal.
- Repeat and Dust: Continue shaping and dusting with cornstarch.
- Serve Immediately or Store: Enjoy right away or store in an airtight container for up to two days.
Notes
Ensure the dough does not overcook and use plenty of cornstarch to prevent sticking.
