Description

Ingredients

  • 2 ripe peaches, peeled and sliced

  • 3/4 cup water
  • Cornstarch for dusting

Instructions

  1. Prepare the Peaches: Toss sliced peaches with sugar and let sit for 10 minutes.
  2. Make the Mochi Dough: Mix glutinous rice flour and water in a bowl until smooth.
  3. Cook the Dough: Microwave for 4-5 minutes, stirring every minute until sticky and translucent.
  4. Dust Your Surface: Sprinkle cornstarch on your work surface.
  5. Shape the Daifuku: Divide dough, flatten, fill with peach mixture, and seal.
  6. Repeat and Dust: Continue shaping and dusting with cornstarch.
  7. Serve Immediately or Store: Enjoy right away or store in an airtight container for up to two days.

Ensure the dough does not overcook and use plenty of cornstarch to prevent sticking.
