Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 1/2 cup peanut butter (natural, unsweetened)
  • 1/4 cup soy sauce
  • 2 tbsp agave nectar or honey
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp lime juice
  • Skewers (bamboo or metal)

Instructions

  1. Whisk together peanut butter, soy sauce, agave nectar, minced garlic, minced ginger, and lime juice in a bowl until smooth.
  2. Cut chicken into bite-sized pieces and toss in the marinade. Let marinate for at least 30 minutes.
  3. Thread marinated chicken onto skewers, leaving space between each piece.
  4. Preheat grill to medium-high heat or oven to broil.
  5. Cook skewers for about 10-15 minutes on the grill or 8-10 minutes in the oven, flipping once.
  6. Serve hot with extra peanut sauce, lime wedges, and cilantro.

Notes

For vegetarians, substitute chicken with tofu or seitan. Alternate butters can be used for peanut allergies.
