Ingredients

- 1 lb boneless chicken (breast or thighs)
- 1/2 cup peanut butter (natural, unsweetened)
- 1/4 cup soy sauce
- 2 tbsp agave nectar or honey
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 2 tbsp lime juice
- Skewers (bamboo or metal)
Instructions
- Whisk together peanut butter, soy sauce, agave nectar, minced garlic, minced ginger, and lime juice in a bowl until smooth.
- Cut chicken into bite-sized pieces and toss in the marinade. Let marinate for at least 30 minutes.
- Thread marinated chicken onto skewers, leaving space between each piece.
- Preheat grill to medium-high heat or oven to broil.
- Cook skewers for about 10-15 minutes on the grill or 8-10 minutes in the oven, flipping once.
- Serve hot with extra peanut sauce, lime wedges, and cilantro.
Notes
For vegetarians, substitute chicken with tofu or seitan. Alternate butters can be used for peanut allergies.
