- 1 lb boneless chicken (breast or thighs)
- 1/2 cup unsweetened peanut butter
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- Skewers (wooden or metal)
Instructions
- Cut chicken into bite-sized pieces and place in a bowl.
- In a separate bowl, whisk together peanut butter, soy sauce, brown sugar, minced garlic, and ginger.
- Pour the marinade over the chicken and let it marinate for at least 30 minutes (preferably longer).
- Thread marinated chicken onto skewers, reserving some marinade for basting.
- Preheat the grill or grill pan over medium-high heat.
- Place skewers on the grill and cook for 3-4 minutes on each side, basting with reserved marinade, until chicken is cooked through.
- Let skewers rest for a few minutes before serving.
Notes
Feel free to substitute chicken with shrimp or tofu for a vegetarian option. Soak wooden skewers in water for at least 30 minutes before grilling.
