- 2 Ripe Pears (Bartlett or Anjou)
- 4 oz Blue Cheese (crumbled)
- 1 Shallot (finely chopped)
- 1 tbsp Olive Oil
- 3 tbsp Balsamic Vinegar or White Wine Vinegar
- 1 tsp Honey or Maple Syrup
- Salt and Pepper (to taste)
Instructions
- Prepare the Vinaigrette: In a small skillet, heat olive oil over medium heat. Sauté the shallot until translucent, about 2-3 minutes. Stir in vinegar and honey/maple syrup, season with salt and pepper, and cool slightly.
- Combine the Greens: In a large bowl, mix together the fresh mixed greens.
- Add the Pears: Slice the pears thinly, add to the greens, and mix gently.
- Crumble the Blue Cheese: Add the crumbled blue cheese to the salad.
- Dress the Salad: Drizzle the shallot vinaigrette over the top before serving and toss gently.
- Taste and Adjust: Adjust seasoning if necessary before serving.
Notes
Serve immediately after dressing to maintain crunch. Can substitute blue cheese with goat cheese or pears with apples if necessary.
