Ingredients

- 1 lb flank steak or sirloin, sliced
- 2 bell peppers (red, yellow, green), diced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1/4 cup fresh parsley or cilantro, chopped
- 1 tsp black pepper
- Salt to taste
- 2 tbsp cooking oil
Instructions
- Heat a large pot over medium heat and add a splash of oil.
- Sauté diced onions and minced garlic for about 5 minutes until softened.
- Add sliced beef to the pot, browning on all sides.
- Toss in the bell peppers and cook until they start to soften.
- Pour in the beef broth and bring to a gentle simmer.
- Season with salt and black pepper; simmer for 20-30 minutes.
- Stir in freshly chopped herbs just before serving.
- Ladle the soup into bowls and serve with crusty bread or over rice.
