- ½ cup powdered sugar (plus extra for dusting)

- ½ cup cornstarch
- 1 teaspoon peppermint extract
- Chopped walnuts or pecans (optional)

Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the butter and powdered sugar until light and fluffy.
- Add the peppermint extract and mix well.
- In a separate bowl, whisk together flour, cornstarch, and salt, then gradually add to the butter mixture until just combined.
- If using, fold in chopped nuts.
- Roll the dough into 1-inch balls and place on a lined baking sheet.
- Bake for 10-12 minutes until lightly golden on the bottoms.
- Roll warm cookies in powdered sugar to coat, then cool completely and roll in sugar again.
Notes
Chill the dough for 30 minutes if it’s too soft. Always measure flour accurately to avoid dense cookies.
