  • 2 cups all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon peppermint extract
  • Chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter and powdered sugar until light and fluffy.
  3. Add the peppermint extract and mix well.
  4. In a separate bowl, whisk together flour, cornstarch, and salt, then gradually add to the butter mixture until just combined.
  5. If using, fold in chopped nuts.
  6. Roll the dough into 1-inch balls and place on a lined baking sheet.
  7. Bake for 10-12 minutes until lightly golden on the bottoms.
  8. Roll warm cookies in powdered sugar to coat, then cool completely and roll in sugar again.
