Instructions
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the heavy cream and egg, then pour it into the flour mixture and stir until just combined.
- Gently fold in the white chocolate chips and peppermint extract.
- Turn the dough onto a floured surface and shape it into a circle about 1 inch thick. Cut into wedges.
- Place on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.
- Let cool slightly before serving.
