- 1 lb boneless chicken (breast or thighs)
- 1 can crushed tomatoes
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon crushed red pepper (adjust to taste)
- 1 onion, finely chopped
- 1/2 cup dry white wine (or chicken broth)
- Fresh herbs (basil and parsley), chopped
- 1/4 cup Parmesan cheese, shredded
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté chopped onions until softened, about 5 minutes, then add minced garlic and cook for another minute.
- Season chicken with salt, pepper, and crushed red pepper. Brown the chicken in the skillet for 5-7 minutes on each side.
- Pour in the white wine, scraping up any bits stuck to the pan. Allow to reduce for 2-3 minutes, then add crushed tomatoes and stir well.
- As the sauce simmers, season with more crushed red pepper, salt, and pepper to taste.
- Cover and reduce heat to medium-low, cooking for 25-30 minutes until the chicken is fully cooked and tender.
- Just before serving, stir in fresh basil and parsley.
- Serve hot, garnished with Parmesan cheese and a drizzle of olive oil.
Notes
For a lighter option, serve with whole-grain pasta or a simple salad. Can be made ahead and reheated for convenience.
