Description

Delightful and fluffy treats filled with a creamy center, perfect for winter gatherings.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 cups all-purpose flour (or gluten-free blend)
  • 2 large eggs
  • 1 teaspoon vanilla extract (or almond extract)
  • 1 teaspoon ground cinnamon
  • 8 ounces cream cheese (or mascarpone for a substitute)
  • 1 cup powdered sugar (for dusting)

Instructions

  1. Cream the butter and granulated sugar together in a large bowl until light and fluffy. Add eggs and vanilla and mix until well incorporated.
  2. In a separate bowl, whisk together the flour, cinnamon, and salt. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  3. Cover the bowl with plastic wrap and refrigerate for about 60 minutes to chill the dough.
  4. Prepare the filling by mixing cream cheese with powdered sugar and a bit of vanilla until smooth.
  5. Preheat the oven to 350°F (175°C). Once chilled, scoop out portions of the dough, flatten in your palm, add a small spoonful of filling in the center, fold the edges over, and roll into a ball.
  6. Place the snowballs on a lined baking sheet and bake for about 12-15 minutes until lightly golden on the bottom.
  7. Allow the snowballs to cool before rolling them in powdered sugar. Serve warm or at room temperature.

Notes

For a dairy-free version, substitute butter with coconut oil and cream cheese with vegan cream cheese. Ensure to chill the dough to maintain the right texture.
