- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour (or gluten-free blend)
- 2 large eggs
- 1 teaspoon vanilla extract (or almond extract)
- 1 teaspoon ground cinnamon
- 8 ounces cream cheese (or mascarpone for a substitute)
- 1 cup powdered sugar (for dusting)
Instructions
- Cream the butter and granulated sugar together in a large bowl until light and fluffy. Add eggs and vanilla and mix until well incorporated.
- In a separate bowl, whisk together the flour, cinnamon, and salt. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Cover the bowl with plastic wrap and refrigerate for about 60 minutes to chill the dough.
- Prepare the filling by mixing cream cheese with powdered sugar and a bit of vanilla until smooth.
- Preheat the oven to 350°F (175°C). Once chilled, scoop out portions of the dough, flatten in your palm, add a small spoonful of filling in the center, fold the edges over, and roll into a ball.
- Place the snowballs on a lined baking sheet and bake for about 12-15 minutes until lightly golden on the bottom.
- Allow the snowballs to cool before rolling them in powdered sugar. Serve warm or at room temperature.
Notes
For a dairy-free version, substitute butter with coconut oil and cream cheese with vegan cream cheese. Ensure to chill the dough to maintain the right texture.
