Instructions
- Cream together the softened butter and sugar until light and fluffy. Add molasses and egg, mixing until combined.
- In another bowl, whisk together flour, baking soda, and spices. Gradually add these dry ingredients to the wet mixture, mixing until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for at least an hour.
- Preheat your oven to 350°F (175°C) and roll out the chilled dough on a floured surface to about 1/4 inch thick. Use cookie cutters to create shapes.
- Line a baking sheet with parchment paper, place cookies about an inch apart, and bake for 8-10 minutes or until set but still soft. Let them cool.
- While cookies cool, whip together softened cream cheese and powdered sugar until smooth.
- Spread a generous layer of cream cheese filling on one cookie and top with another.
