Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy (about 3-5 minutes). Add in the egg and vanilla extract, mixing until combined.
- In another bowl, whisk together the flour, ground ginger, ground cinnamon, ground cloves, and baking soda. Gradually add to the wet ingredients, mixing until just combined.
- Cover the dough and refrigerate for at least 30 minutes.
- Roll the chilled dough into 1-inch balls and place on the baking sheets, leaving space for spreading. Bake for 8-10 minutes, then cool on wire racks.
- For the frosting, beat cream cheese until smooth, then gradually add powdered sugar, vanilla, and a pinch of salt until fluffy.
- Once cookies are cool, spread frosting on one cookie and top with another to create sandwiches.
