  • Fresh basil for garnish
  • Salt and pepper to taste
  • Optional: Crushed red pepper flakes

Instructions

  1. Cook the linguine in salted water until al dente, reserving 1 cup of pasta water before draining.
  2. In a large skillet over medium heat, warm olive oil, add minced garlic, and sauté for 30 seconds until fragrant.
  3. Add shrimp, season with salt and pepper, and cook until pink and opaque, about 3-4 minutes.
  4. Add the drained linguine to the skillet and stir gently to combine.
  5. Stir in the pesto, adding reserved pasta water gradually to reach the desired consistency.
  6. Incorporate the halved cherry tomatoes and heat through for another minute.
  7. Remove from heat, mix in Parmesan cheese and fresh basil, and serve immediately.

Notes

For a lighter version, consider swapping linguine for zucchini noodles or using chicken/tofu instead of shrimp.
