- 1 pound shrimp, peeled and deveined
- 1/2 cup pesto
- 2 tablespoons olive oil

- 1 cup cherry tomatoes, halved

- Fresh basil for garnish
- Salt and pepper to taste
- Optional: Crushed red pepper flakes
Instructions
- Cook the linguine in salted water until al dente, reserving 1 cup of pasta water before draining.
- In a large skillet over medium heat, warm olive oil, add minced garlic, and sauté for 30 seconds until fragrant.
- Add shrimp, season with salt and pepper, and cook until pink and opaque, about 3-4 minutes.
- Add the drained linguine to the skillet and stir gently to combine.
- Stir in the pesto, adding reserved pasta water gradually to reach the desired consistency.
- Incorporate the halved cherry tomatoes and heat through for another minute.
- Remove from heat, mix in Parmesan cheese and fresh basil, and serve immediately.
Notes
For a lighter version, consider swapping linguine for zucchini noodles or using chicken/tofu instead of shrimp.
