- 4 bell peppers (red, yellow, or green)
- 1 pound ground beef
- 1 cup diced onions
- 1 cup sliced mushrooms (white button or cremini)
- 1 cup provolone cheese (or mozzarella/sharp cheddar)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Preheat your oven to 375°F (190°C).
- Wash the bell peppers, slice the tops off, and remove the seeds.
- In a large skillet, heat olive oil over medium heat. Add diced onions and sliced mushrooms, sautéing until soft.
- Add ground beef to the skillet, season with garlic powder, salt, and pepper. Cook until browned.
- Remove from heat and stir in half of the cheese until melted.
- Spoon the filling into each bell pepper and place upright in a baking dish.
- Top with remaining cheese and add a splash of broth or water to the dish.
- Bake for 25-30 minutes until peppers are tender and cheese is bubbling.
- Optionally, sprinkle fresh chopped parsley or oregano before serving.
Notes
Ensure not to overcook the peppers; they should be tender but not mushy. You can substitute ground beef for shredded chicken, turkey, or a plant-based alternative for a vegetarian version.
