  • 1 pound ground beef
  • 1 cup diced onions
  • 1 cup sliced mushrooms (white button or cremini)
  • 1 cup provolone cheese (or mozzarella/sharp cheddar)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the bell peppers, slice the tops off, and remove the seeds.
  3. In a large skillet, heat olive oil over medium heat. Add diced onions and sliced mushrooms, sautéing until soft.
  4. Add ground beef to the skillet, season with garlic powder, salt, and pepper. Cook until browned.
  5. Remove from heat and stir in half of the cheese until melted.
  6. Spoon the filling into each bell pepper and place upright in a baking dish.
  7. Top with remaining cheese and add a splash of broth or water to the dish.
  8. Bake for 25-30 minutes until peppers are tender and cheese is bubbling.
  9. Optionally, sprinkle fresh chopped parsley or oregano before serving.
