Ingredients

  • 2 cups frozen or freshly shredded hash browns
  • 4 large eggs
  • 1/2 cup diced dill pickles
  • 1 cup sharp cheddar cheese, shredded
  • Salt and pepper to taste
  • 2 tablespoons cooking oil (butter or olive oil)

Instructions

  1. Preheat a nonstick skillet over medium heat.
  2. If using fresh hash browns, squeeze out excess moisture and season with salt and pepper.
  3. Shape the hash browns into small, flat patties (about 1/4 cup each).
  4. In the skillet, add oil and cook the hash brown patties for 3-4 minutes on each side until golden brown and crispy.
  5. While the hash browns are cooking, whisk the eggs in a bowl, adding a pinch of salt and pepper.
  6. Once the patties are done, push them to one side and pour the egg mixture into the skillet. Scramble gently until just set.
  7. Add diced pickles and cheese to the eggs, stirring until melted.
  8. Assemble the sliders by spooning the egg mixture onto a hash brown patty and topping it with another patty.
  9. Let sit for a minute to allow the cheese to melt.
  10. Serve with sour cream or fresh fruit.
