- 2 cups frozen or freshly shredded hash browns
- 4 large eggs
- 1/2 cup diced dill pickles
- 1 cup sharp cheddar cheese, shredded
- Salt and pepper to taste
- 2 tablespoons cooking oil (butter or olive oil)
Instructions
- Preheat a nonstick skillet over medium heat.
- If using fresh hash browns, squeeze out excess moisture and season with salt and pepper.
- Shape the hash browns into small, flat patties (about 1/4 cup each).
- In the skillet, add oil and cook the hash brown patties for 3-4 minutes on each side until golden brown and crispy.
- While the hash browns are cooking, whisk the eggs in a bowl, adding a pinch of salt and pepper.
- Once the patties are done, push them to one side and pour the egg mixture into the skillet. Scramble gently until just set.
- Add diced pickles and cheese to the eggs, stirring until melted.
- Assemble the sliders by spooning the egg mixture onto a hash brown patty and topping it with another patty.
- Let sit for a minute to allow the cheese to melt.
- Serve with sour cream or fresh fruit.
