- 2 cups fresh pineapple, finely chopped
- 1/2 cup sugar (adjust to taste)
- 1 tsp cinnamon
- 2 cups all-purpose flour
- 1/2 cup butter, cut into pieces
- 1 egg, for egg wash
- Water, as needed
Instructions
- Make the Filling: Place chopped pineapple in a saucepan over medium heat, add sugar and cinnamon, and cook until thickened (8-10 minutes). Allow to cool.
- Prepare the Dough: Mix flour and salt in a bowl, cut in butter until crumbly, then gradually add cold water until it comes together.
- Roll and Cut: Divide dough into balls, roll thin, and cut into 4-5 inch circles.
- Fill and Seal: Place a tablespoon of filling on each circle, fold and crimp edges to seal.
- Bake: Preheat oven to 375°F (190°C), brush empanadas with egg wash, and bake for 20-25 minutes until golden.
- Cool and Serve: Let cool slightly, dust with powdered sugar, and serve.
Notes
Ensure not to overfill the empanadas to prevent bursting during baking. Allow filling to cool before sealing.
