Description

Delicious Pineapple Empanadas with a sweet and tangy filling, wrapped in a flaky pastry.


Ingredients

  • 1 Fresh Pineapple, peeled and chopped
  • 1/2 cup Granulated Sugar
  • 1/2 tsp Ground Cinnamon
  • 1/4 tsp Ground Nutmeg
  • 1 tbsp Fresh Lime Juice
  • 2 cups All-Purpose Flour
  • 1/2 cup Cold Unsalted Butter, cubed
  • 1 Egg, for egg wash
  • 1 tbsp Water, for egg wash

Instructions

  1. Prepare the filling by cooking chopped pineapple with sugar, cinnamon, nutmeg, and lime juice in a skillet over medium heat for 10-15 minutes until thick. Let it cool.
  2. Make the dough by whisking flour and salt, cutting in cold butter. Gradually add water until dough forms, then chill for at least 30 minutes.
  3. Roll out chilled dough to 1/8-inch thickness and cut rounds.
  4. Fill each round with a spoonful of cooled pineapple filling, fold over and seal the edges.
  5. Preheat oven to 375°F (190°C), brush empanadas with egg wash, and bake for 20-25 minutes until golden brown.
  6. Let cool slightly before serving.

Notes

Serve warm, with powdered sugar or whipped cream. Great for gatherings or as a treat.
