Description
Delicious Pineapple Empanadas with a sweet and tangy filling, wrapped in a flaky pastry.
Ingredients

- 1 Fresh Pineapple, peeled and chopped
- 1/2 cup Granulated Sugar
- 1/2 tsp Ground Cinnamon
- 1/4 tsp Ground Nutmeg
- 1 tbsp Fresh Lime Juice
- 2 cups All-Purpose Flour
- 1/2 cup Cold Unsalted Butter, cubed
- 1 Egg, for egg wash
- 1 tbsp Water, for egg wash
Instructions
- Prepare the filling by cooking chopped pineapple with sugar, cinnamon, nutmeg, and lime juice in a skillet over medium heat for 10-15 minutes until thick. Let it cool.
- Make the dough by whisking flour and salt, cutting in cold butter. Gradually add water until dough forms, then chill for at least 30 minutes.
- Roll out chilled dough to 1/8-inch thickness and cut rounds.
- Fill each round with a spoonful of cooled pineapple filling, fold over and seal the edges.
- Preheat oven to 375°F (190°C), brush empanadas with egg wash, and bake for 20-25 minutes until golden brown.
- Let cool slightly before serving.
Notes
Serve warm, with powdered sugar or whipped cream. Great for gatherings or as a treat.
