Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the butter and sugars in a mixing bowl until light and fluffy (about 3 to 4 minutes).
  3. Add the eggs and vanilla, beating in one at a time until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt, then gradually add to the wet mixture, stirring until just combined.
  5. Fold in the chocolate chips and chopped pistachios.
  6. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them apart.
  7. Bake for 10-12 minutes until the edges are golden and centers look slightly underbaked.
