- 1 cup chocolate chips (semi-sweet or dark)
- 3/4 cup chopped pistachios
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the butter and sugars in a mixing bowl until light and fluffy (about 3 to 4 minutes).
- Add the eggs and vanilla, beating in one at a time until fully combined.
- In a separate bowl, whisk together the flour, baking soda, and salt, then gradually add to the wet mixture, stirring until just combined.
- Fold in the chocolate chips and chopped pistachios.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them apart.
- Bake for 10-12 minutes until the edges are golden and centers look slightly underbaked.
- Allow to cool for a couple of minutes before transferring to a wire rack.
- For chewy cookies, chill the dough for an hour before baking.
Notes
For gluten-free, substitute all-purpose flour with almond flour or a gluten-free blend. Use a flax egg for an egg-free option.
