- 1 cup granulated sugar
- 1/2 cup brown sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 cup shelled pistachios, chopped
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- Sea salt, for sprinkling
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Cream together unsalted butter, granulated sugar, and brown sugar until light and fluffy (3-5 minutes).
- Add the eggs one at a time, mixing well after each addition, then mix in vanilla extract.
- Gradually mix in all-purpose flour until a soft batter forms.
- Fold in the chopped pistachios.
- Pour batter into the prepared baking dish and spread it evenly. Bake for 30-35 minutes, until a toothpick comes out with a few moist crumbs.
- While the crust bakes, mix softened cream cheese and powdered sugar until smooth. Optionally add a pinch of salt.
- Once the crust cools slightly, spread the cream cheese mixture evenly on top.
- Return to the oven and bake for an additional 25-30 minutes, until the filling is set but still slightly jiggly.
- Let cool in the pan for about 20 minutes before slicing. Dust with powdered sugar and extra pistachios before serving.
