  • 1 wheel of brie cheese
  • 1 cup shelled pistachios, coarsely chopped
  • 1/2 cup fig jam
  • 12 tablespoons honey (optional)
  • 1 tablespoon olive oil
  • Fresh herbs (thyme or rosemary) for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If using a whole wheel, slice it into rounds or wedges.
  3. In a small bowl, combine chopped pistachios and olive oil. Press the mixture onto the brie rounds until fully coated.
  4. Place the brie rounds onto a baking sheet lined with parchment paper and bake for 8-10 minutes, until golden brown.
  5. While baking, heat fig jam in a small pan over low heat until warmed and liquefied. Mix in honey if desired.
  6. Serve the warm brie rounds drizzled with fig glaze and sprinkle with additional crushed pistachios.
