- 1/2 cup whole milk
- 1 tbsp lemon zest
Instructions
- Preheat the oven to 350°F (175°C) and prepare three 8-inch cake pans with baking spray or parchment paper.
- In a bowl, whisk together flour, ground pistachios, baking powder, and a pinch of salt.
- Cream the melted butter and sugar in a separate bowl until fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Fold in the ricotta and milk to create a batter.
- Gradually mix in the dry ingredients, being careful not to overmix.
- Divide the batter among the pans and tap lightly to release air bubbles.
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow to cool in the pans for 10 minutes before transferring to a wire rack.
- Once cooled, frost between layers and on top with cream cheese or whipped cream, and decorate with crushed pistachios.
