Instructions

  1. Preheat the oven to 350°F (175°C) and prepare three 8-inch cake pans with baking spray or parchment paper.
  2. In a bowl, whisk together flour, ground pistachios, baking powder, and a pinch of salt.
  3. Cream the melted butter and sugar in a separate bowl until fluffy.
  4. Beat in the eggs one at a time, followed by the vanilla extract.
  5. Fold in the ricotta and milk to create a batter.
  6. Gradually mix in the dry ingredients, being careful not to overmix.
  7. Divide the batter among the pans and tap lightly to release air bubbles.
