A delightful fusion of pizza and enchiladas filled with seasoned ground beef, gooey cheese, and topped with rich tomato sauce.

- 1 pound ground beef
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup tomato sauce
- 2 tablespoons taco seasoning
- Optional toppings: cilantro, green onions, sour cream
Instructions
- In a large skillet over medium heat, brown the ground beef, breaking it apart. Drain excess fat and stir in taco seasoning and half a cup of tomato sauce.
- Preheat oven to 350°F (175°C). Place a spoonful of the beef mixture down the center of a tortilla, sprinkle with cheese, and roll tightly. Place seam-side down in a greased baking dish.
- Repeat with remaining tortillas. Pour the remaining tomato sauce over the rolled enchiladas and sprinkle with cheese.
- Cover with foil and bake for 20–25 minutes. Remove foil for the last 10 minutes to brown the cheese.
- Let cool for a few minutes before serving, garnished with fresh cilantro or green onions.
Notes
For a lighter option, substitute ground beef with turkey or chicken. Use corn tortillas for a gluten-free version.
