Description

A delightful fusion of pizza and enchiladas filled with seasoned ground beef, gooey cheese, and topped with rich tomato sauce.


Ingredients

  • 1 pound ground beef
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup tomato sauce
  • 2 tablespoons taco seasoning
  • Optional toppings: cilantro, green onions, sour cream

Instructions

  1. In a large skillet over medium heat, brown the ground beef, breaking it apart. Drain excess fat and stir in taco seasoning and half a cup of tomato sauce.
  2. Preheat oven to 350°F (175°C). Place a spoonful of the beef mixture down the center of a tortilla, sprinkle with cheese, and roll tightly. Place seam-side down in a greased baking dish.
  3. Repeat with remaining tortillas. Pour the remaining tomato sauce over the rolled enchiladas and sprinkle with cheese.
  4. Cover with foil and bake for 20–25 minutes. Remove foil for the last 10 minutes to brown the cheese.
  5. Let cool for a few minutes before serving, garnished with fresh cilantro or green onions.

Notes

For a lighter option, substitute ground beef with turkey or chicken. Use corn tortillas for a gluten-free version.
