Ingredients

  • 1 onion, finely chopped
  • 2 carrots, chopped
  • 2 potatoes, peeled and chopped
  • 1/4 cup fresh dill, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1/2 cup cream
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Melt the butter in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the garlic, cooking for an additional minute.
  3. Add the chopped carrots and potatoes, stirring to combine, and let soften for about 5 minutes.
  4. Pour in the broth and bring to a gentle simmer. Cover and let cook for about 15-20 minutes, or until the vegetables are tender.
  5. Stir in the fresh dill, cream, and lemon juice, cooking just until heated through. Adjust seasoning with salt and pepper.
  6. Serve hot, garnished with more fresh dill and a sprinkle of black pepper.
