Ingredients

  • 3 medium Yukon Gold or Russet potatoes, peeled and diced
  • 4 cups vegetable or chicken broth
  • 1 bunch fresh dill, chopped (plus extra for garnish)
  • 1 cup sour cream
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • Salt and black pepper to taste
  • Olive oil for sautéing

Instructions

  1. Prep your ingredients: Peel and dice the potatoes, carrots, and onions. Chop the fresh dill, setting some aside for garnishing later.
  2. Sauté the vegetables: In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onions and sauté until translucent, about 5 minutes. Add the garlic and sauté for another minute.
  3. Combine and simmer: Add the potatoes and carrots, followed by the broth. Bring to a boil, lower the heat, and let it simmer for 20 minutes or until the vegetables are tender.
  4. Stir in the dill: Once cooked, stir in the fresh dill and sour cream. Adjust seasoning with salt and black pepper.

Notes

For a vegan version, substitute sour cream with coconut cream and use vegetable broth. Feel free to add other vegetables like celery or mushrooms.
