Instructions

  1. In a mixing bowl, whisk together the flour, eggs, milk, and salt until smooth. Let it rest for 30 minutes.
  2. Warm a non-stick skillet over medium heat, grease it lightly, pour 1/4 cup of batter, and cook until golden on both sides.
  3. Stack the cooked crêpes on a plate as you go.
  4. Beat the heavy cream with powdered sugar until soft peaks form.
  5. Spread pomegranate jelly on each crêpe followed by a dollop of whipped cream and stack layers.
  6. Refrigerate the assembled roll for at least 1 hour.
  7. Slice and garnish with pomegranate seeds before serving.
