- 2 large eggs
- 2 cups milk
- A pinch of salt
- 1 jar pomegranate jelly
- 1 cup heavy cream (for whipped cream)
- 1–2 tablespoons powdered sugar (for whipped cream)
- Fresh pomegranate seeds (for garnish)
Instructions
- In a mixing bowl, whisk together the flour, eggs, milk, and salt until smooth. Let it rest for 30 minutes.
- Warm a non-stick skillet over medium heat, grease it lightly, pour 1/4 cup of batter, and cook until golden on both sides.
- Stack the cooked crêpes on a plate as you go.
- Beat the heavy cream with powdered sugar until soft peaks form.
- Spread pomegranate jelly on each crêpe followed by a dollop of whipped cream and stack layers.
- Refrigerate the assembled roll for at least 1 hour.
- Slice and garnish with pomegranate seeds before serving.
Notes
For a twist, substitute pomegranate jelly with raspberry or strawberry preserves. You can also use Greek yogurt instead of whipped cream for a healthier option.
